My all-time favorite tea is white tea. Its soft, sweet, and delicate flavor suits any occasion and mood, bringing a quiet sense of delight.
This particular tea is Silver Needle, one of the most prized of all white teas. In China, white teas were once reserved for emperors and their families because of their rarity and delicacy. Silver Needle is crafted from the year’s very first tea buds, which makes it especially treasured.
White tea is best brewed at a lower temperature—about 75–80°C (167–176°F)—for roughly 4 minutes. Steeping it longer can draw out the bitterness.
